I had planned ahead this week and bought some healthy ingredients on Sunday at the store. I had some recipes picked out and an idea of the meals I wanted to make. Some people plan each day, I try, but sometimes life happens. Today led me to two great recipes, a great workout and day off work for a doctor appointment. We grilled some marinated chicken breasts on Sunday to prep ahead as well. I think the key is to get as much prepped while you have some time ahead of the week incase some unexpected events occur. Like the whole house getting the flu, which has started at this household. Yikes!
I put one link of chicken apple sausage in a pan with some mini peppers, shallots, and mushrooms. After cooking for a few minutes I added 2 Happy Eggs. This made a great egg skillet dish. To finish it off, you gotta add the Red Hot sauce!
Before I began the egg skillet dish, I mixed together a Paleo/Gluten Free Blueberry Lemon Muffin recipe. When I say this recipe was easy, I mean it! I have a sweet tooth and love to bake, but I know that is not realistic when it comes to my health. So I chose to make some adjusted recipes for some of my favorite baked goods. These offer me less inflammation and added protein. Plus, I can freeze some of these for the next few weeks.
Just some things to remember, don’t over mix almond flour with the other ingredients and I actually got 16 muffins out of this recipe instead of just 12. I also baked them for about 20 minutes instead of 13 minutes. Happy Tuesday, all!
